A French classic with an Irish twist - Bourguignon (Borg-in-yon) is a stew that is slow cooked with red wine. We switch it up and remove the alcohol to replace it with tangy apple cider vinegar and earthy beetroot to achieve the same color and develop the flavour in our own unique way.
We source our buffalo from a renowned Irish producer in West Cork and pair it with quality Irish vegetables: chestnut mushrooms, pearl onions and beetroot.
